Cheese is Life (and other things)

Hello! Guys, I’ve been slack … I haven’t blogged in ages. We have had a busy couple of weeks with work and winter sickness.

The other thing that has been taking up my time is my new eating plan / lifestyle change. A friend of mine is studying nutritional medicine and set me a food challenge to cut out carbs and all sugar and fast 16 hours a day (8pm – 12pm), for two to four weeks (depending on how I was going).

I am currently two and a half weeks in, and while I have had a few slips here and there for the most part I have stuck to the challenge.

I guess if you are looking for a mainstream diet to align what I am doing with it would be Keto, although I believe there are a few differences. I decided to give this a go because I have been struggling to lose weight despite eating “healthy” and exercising. I had also started reacting to highly processed gluten, and what we suspect to be a hormone imbalance.

So far it seems to be working, I will give you run down of all the results in another post. For now I thought I would share some photos of what I have been eating the last couple of weeks. I know it sounds very strict and kinda scary to say I have cut out carbs and all sugar, but honestly its not that bad. CHEESE IS LIFE!

BBQ chicken is a great quick go to meal or snack. I put it in lettuce cups and added homemade mayo for lunch on my first day.

My family loves pizza, and we often make it at home on a Saturday night. I made myself a cauliflower crust and topped it with ham, salami, mushrooms, olives and cheese.

Another quick go to weeknight dinner in our house is spaghetti bolognaise. I had the same sauce as the others but swapped pasta for zuchini noodles.

this was a very lazy but very delicious week night dinner. the others where having something else so I threw this together for myself. It’s just stir fried cabbage with bacon and cheese. CHEESE IS LIFE!

Grilled salmon on steamed broccoli and cauliflower with a squeeze of lemon juice and a sprinkle of fresh herbs is so quick and simple and absolutely delicious!

this is another go to lunch for me, usually when I don’t have left overs from the night before. I just throw together a quick Greek salad and top it with a can of tuna. It’s not terribly exciting but its tasty and filling.

As I said, pizza is popular in our house. It’s probably Brian’s favourite food ever. So I made another one, this time using a base made from chicken and topped with pepperoni and cheese. It was a winner, sorry cauliflower crust.

a couple of years ago I bought Brian a smoker for Christmas, so over the weekend he smoked a brisket and I made a coleslaw style salad with my home made mayo and fresh herbs. and brocolini of course because it is amazing with a squeeze of lemon juice.

I make these little middle eastern spiced meatballs often, usually in a wrap with salad. But this time I served them with mashed pumpkin and a feta and walnut salad. Eve my darling fiancé loved this salad, and that never happens.

Guys … I lifted my game with this one. Brian has decided to join me on the challenge so I have been putting in a bit more effort to help him enjoy the meals. This was chilli con carne, with tomato and avocado salsa, sour cream and cheese crisps. I’ll say it again …  CHEESE IS LIFE!

Last night we had garlic and parmesan chicken with mashed pumpkin and broccoli. It was quick and easy because I was also cooking birthday cakes filled with sugar and carbs, but it was tasty!

and last but not least, bone broth. Which I am drinking while I wrote this post because I am hungry today and can’t wait for the fast to be over.
